Why pasta feels so comforting
Pasta is simple, warm and filling, and it is easy to share. A good plate is cooked until it still has a little bite, then tossed with a sauce that clings to every strand or tube. That balance is what makes it feel both familiar and satisfying.
Pick the shape for the sauce
In Italian cooking, the shape of the pasta is chosen to suit the sauce. Thick, tube-shaped pasta holds a hearty sauce well, while long ribbons are lovely with something creamy or fresh.
- Beef Ragu: slow-braised beef brisket with onion, spinach and mushrooms, served with rigatoni and parmesan. Rich, deep and ideal on a cold night.
- Chicken Pappardelle Pesto: wide ribbons with basil pesto, pine nuts, chicken and Parmigiano Reggiano. Fresh and creamy.
- Fettuccine Gamberi: tiger prawns in a Napoli sauce with garlic and white wine for something lighter with a little seafood.
- Fettuccine Boscaiola and Fettuccine Salsiccia: savoury, comforting plates for anyone who likes bold flavours.
Good pasta does not need to be complicated. It needs to be cooked well and shared.
Pasta for everyone at the table
Not everyone wants the same thing, so we keep the choice wide. There are risotto dishes if you prefer rice, and our kids’ menu includes pasta with Bolognese, Napolitana or just butter.
A simple way to order
If you are dining with friends, order a pizza or two for the middle of the table and add two different pastas to share. You get the best of both without anyone missing out.
